Basic Chicken Soup

Ingredients

  • meat from rotisserie chicken

  • 1 tbs ghee

  • 3 stalks of celery chopped

  • 1 white onion chopped

  • 4-5 carrots sliced

  • 1/2 tsp corriander

  • 1/4 tsp cumin

  • 1/2 tsp oregano

  • 2 whole Bay leaves

  • 1 sweet potato peeled and chopped

  • 1/2 butternut squash peeled and chopped

  • any type of grain or legum on the “ok” list (optional)

  • 4 cups broth

  • Salt and Pepper to taste

Instructions

  1. Melt ghee in pot

  2. Add spices and saute until you can aromatic

  3. Add celery, onion and carrots and saute until onions are tender

  4. Add broth

  5. Add remaining vegetables and grains if desired

  6. Cook until vegetables are tender

  7. Remove meat from whole chicken and add to soup (save bones to make broth)

  8. Cover and simmer until chicken is warm

  9. Serve
